This has probably been asked before but so if I want to battle somebody that has an open battle I have to write the verse on the spot? What if I write it and somebody else accepts the challenge before I do? Is there a way I can be like have your verse ready by an agreed date and we both drop?

Always copy your verse before submitting so at least you have it saved if someone else beats you to it. And yes, you can it's called a closed battle except there is no time limit. You agree to battle, go to send, type their name in and send. Then they can respond with no risk of anyone else taking it.
