First off,e do understand how the earth was formed. we have an outstanding understanding of the physics of planet formation and whatnot. We don't have a great understanding of physics at the big bang, but that will come soon enough.

Also, scientific theory is a way to describe fact. For example, evolution is a fact. We have the fossil records and the understanding of biology to state that it happened. the theory of evolution is just how we think it came about. For another example, there is gravity. Gravity is a fact. We see it everyday. The theory if gravity is how we describe and understand something that is fact. Go back to middle school.
